Seats auctioned off for Ana Roš Stojan's charity dinner

Slovenian star chef Ana Roš Stojan hosted a charity dinner in her pop-up restaurant in Ljubljana on 5 September for donors who earned their seats at the tables at an auction. One of the seats went for as much as as €820 and the event has raised more than €20,000 for a family affected by the early August floods.

The dinner at Ana in Slon, the Michelin-stared chef's bistro at Hotel Slon, was prepared by Roš Stojan in collaboration with her teams from her home restaurant Hiša Franko in Kobarid, Ana in Slon and the Pekarna Ana bakery in Ljubljana.

"Our decision to join forces stems from deep sympathy felt for all those affected by the floods in Slovenia. These include people we know, our friends and colleagues," Roš Stojan, the 2017 world's best woman chef, was quoted as saying by Hiša Franko.

As a starter, the donor guests were served a corn on the cob glazed with corn kombucha and butter, focaccia with goat cheese and a bread basket with mountain butter and Piran salt, and bruschetta with oyster mayonnaise, anchovies, tomato and basil.

The main course featured spaghetti in strawberry, herb, tomato paste and pesto sauce, two-day dry-aged trout in brown butter and trout sauce, and venison loin with baked apples, freshly grated horseradish, brown butter puree and celeriac.

For dessert, the guests were treated to granita with fig leaves, chocolate texture, hazelnut praline and crunchy hazelnuts, pressed dried figs in Abuelo rum with honey, and fresh milk ice cream with olive oil.

Roš Stojan noted that the idea was to put this unique dinner at an auction, with the starting price of the entire menu with wine or a non-alcoholic beverage at €520.

One of the seats went for €820, with the entire dinner and additional individual donations eventually raising more than €20,000 for a flood-stricken family.

People can also make donations until the end of October by dining at Hiša Franko, the only Slovenian restaurant boasting two Michelin stars, with part of the revenue going to the fund opened by the Roš Stojan couple at Slovenian Caritas, the Catholic charity.

The restaurant said their support for the family was not ending with the dinner. "We will keep an eye on the family and help them until they manage to make at least a decent living again," Roš Stojan said.
